Born and raised in Milan, Chef Marco Rossi developed his passion for cooking in his grandmother's kitchen, where he learned the importance of quality ingredients and time-honored techniques.
After training under Michelin-starred chefs in France and Italy, Marco returned to Milano with a vision: to create a restaurant that honors classical tradition while embracing contemporary innovation.
At Paperplane, Marco crafts seasonal menus that showcase the finest Italian produce, blending precision, creativity, and a deep respect for culinary heritage.
